Masahiro Tobe (The “Apple Magician”)

Certified Sake Brewing Master (Member of the Yamauchi Tōji Association)

I was a member of the Yamauchi Tōji Association in Akita, where I served as a brewery worker.

My specialty is koji-making, but over time I’ve become skilled in various stages of sake production, including moto (yeast starter), fune (pressing), moromi (main mash), and even bookkeeping.

Sharing drinks with loved ones over delicious food is one of life’s greatest joys — and it’s even better when the sake is one I’ve brewed myself.

I try to apply the wisdom passed down from my predecessors to my own work, hoping it might someday help those who follow after me. I’ll keep doing my best alongside my fellow brewers.

My hobbies include drawing, apple carving, hunting, fishing, gardening, railways, and playing with cats, among other things.
